The talented Chef Peter Jackson is used to doing pop-up dinners with Canvas Underground, but and this is the first time he’s branching off on his own. He’s actually planning a series of pop-up dinners and the first is a Pig Roast. There will be 5 courses and you’re encouraged to BYOB. Here’s the menu:
1st Course: Amuse Bouche (passed appetizers)
Gougére- Cream puff with gruyere cheese
Smoked salmon mousse on endive with dill garnish
Crostini with olive oil and egg with a dollop of honey
2nd course: Soup
Nettles soup with morel mushroom garnish
3rd Course: Main Entrée (Family Style)
Whole hog roasted in a Caja China Box
Option of (3) sauces to dress pork
Romesco (Spanish)
Chimichurri (Argentina)
Lechon Sauce (Filipino)
Sides
Grilled chicory, sweet peppers and asparagus in olive oil
Green garlic and potato gratin
4th Course: Refresher Salad
Little gem lettuces with kumquat, toasted almonds
Meyer lemon citronette dressing
5th Course: Dessert with Coffee Service
Boca Negra Cake
