Nosy – Life-Changing Waffles

Noble Cafe is the first 0% carbon footprint cafe in the country, according to proprietor Dimitri Thompson.  On top of composting, using low-watt light bulbs and a Cadillac of an espresso machine that turns off automatically, he offsets the little energy the cafe does use by donating to Oakland parks.  All of these facts are very impressive, newsworthy and even noble, but it’s the Belgian waffle that I can’t stop thinking about.  It wasn’t like any waffle I’ve tried before: it was substantial and thick, with a crunchy exterior that gave way to a soft, chewy center.  Carmelized sugar was the dominant flavor, followed by yeast.  Besides the Waffle Mania Truck, which is at the Grand Lake Farmers Market on Saturdays, Noble Cafe is the only place to offer them in the East Bay.  The menu also includes soups, salads and sandwiches, but if I were you, I’d just order a waffle.  By the way, Dimitri has graciously agreed to host our book club and he’ll even offer discounts on purchases.  The café, which opened about a week and a half ago, is currently open 7am – 5pm and plans to extend hours soon.
