Blue Saigon Food Truck first hit the road about two years ago and you might have seen it in Oakland at the Art & Soul Festival or Off the Grid. Now, chef/owner Kiem Nguyen is getting ready to open a store front. Conveniently located around the corner from his house, he’ll be able to stay open longer so customers can get his Vietnamese and Mexican fusion cuisine whenever they get a craving. But don’t worry, the truck will still make appearances at festivals and catering events. Garlic Spam Fried Rice, Honey Fried Chicken, Saigon Burrito , Fusion tacos, Cup of Pho, Vietnamese sandwiches with a twist and Italian shaved ice desserts are some of the dishes on the menu.
