Warm Rice Salad with Aleppo Roasted Squash

I didn’t accomplish all of my workout and meal goals last week and my mom’s birthday was last weekend, so I wasn’t surprised that I gained weight. But I still lost an inch, so that counts as progress, right?

How much I lost

Last week:         Gained 1.6 lbs and lost 1 inch

Total:                 5.2 lbs and 12 inches

What I ate

Last week I successfully experimented with Middle Eastern flavors, so this week I decided to use Aleppo Chile again and add Preserved Lemon to the mix. Market Hall’s recipe for Warm Rice Salad with Aleppo Roasted Squash was hearty but light, with bright and balanced flavors.

I also made Pasta with Italian Chicken Sausage with Community Grains, which is still the best whole wheat pasta I’ve ever tasted.

How I worked out

My goal was to exercise five times last week, but I only fit in three workouts. Even though I didn’t reach my goal, I’m still proud of myself for doing something. Next week will be better!

What I learned

  • Chermoula is incredibly delicious on an egg sandwich!
  • I need to make a plan in advance so I can join a celebration without derailing my progress.
  • Still trying to wake up earlier so I can fit in morning workouts before I get busy.
  • I also need some way to remind myself to drink more water.

Next week

There’s only 1 week left in my Food Lover Fitness challenge and I want to finish strong. Next week, my goal is to drink 6 glasses of water a day.
