Hopscotch has been serving “regional American food with Japanese sensibility” for the past four months. Last Friday night, Chef Kyle Itani opened Yonsei Ramen Shop in his own restaurant after it closed at 11pm. I didn’t make it to the soft opening, but after looking at his pictures of the 18 hour stock, I think I probably (definitely) need to taste the complete dish. Yonsei Ramen Shop will pop-up every Friday through November so you can get your late night ramen fix.
