Originally, from Calabria, Rosetta Costantino has been teaching cooking classes in the East Bay since 2004, and started writing cookbooks a few years ago too. Southern Italian Desserts was just released this month and is the first English language cookbook to feature sweet recipes from Calabria, Campania, Basilicata, Puglia and Sicily. The publisher sent me a review copy so I actually tried a recipe last night: Torta de Mele e Ricotta (apple and ricotta cake). Honestly, I was skeptical because it was an unusual method, but it was easy enough to put together. The cake that emerged from the oven was crunchy on the outside, fluffy on the inside, tart, slightly sweet and studded with apples. Let’s just say I had two slices. Rosetta be at Rockridge Market Hall this weekend to talk about the cookbook, sign copies and demonstrate the braiding of Intorchiatte.
