Easy, Almost Vegan Sundae Recipe

I have a serious sweet tooth and it can get me into trouble sometimes, especially since I became lactose intolerant a couple years ago.  I’m always looking for healthy ways to satisfy my cravings and this recipe is a winner.  It’s creamy, gooey, crunchy and almost vegan!

Remember that Tart! Bakery granola from last month?  It was so addictive I wanted to use it in a recipe (by the way, Shawn makes it with honey, so that’s why this sundae is almost vegan).

I was doubtful when I first saw this one ingredient banana ice cream, but it really works!  All you have to do is freeze banana slices and toss them in a food processor.  After going back in the freezer, the ice cream was so creamy and sweet, I had to keep reminding myself not to feel guilty.

It took three tries to get the chocolate sauce right, but the last attempt was so chocolatey and gooey I ended up eating it by the spoonful.

This sundae is pretty healthy, but still so ooey, gooey and delicious.

Banana Ice Cream

2 bananas, sliced and frozen

Put frozen banana slices in a food processor.  Mix for several minutes until smooth, scraping the sides periodically.  Pour into a container and freeze until solid.

Vegan Chocolate Sauce

2 tablespoons coconut oil

2 tablespoons cocoa powder

1-2 tablespoons agave

1-2 tablespoons almond milk

Heat ingredients and mix well.

Easy, Almost Vegan Sundae

1-2 scoops of Banana Ice Cream

1-2 tablespoons of Vegan Chocolate Sauce

1-2 tablespoons of Tart! Bakery granola

Scoop the ice cream in a pretty glass. Drizzle with chocolate sauce and sprinkle with granola.  Add more chocolate sauce as necessary.  Enjoy!
