Eating Healthy Can Also Be Delicious

I knew that eating healthy could also be delicious, but I didn’t realize there were so many options. Every week I learn new recipes and techniques and I’m STILL making progress. This was how week 5 went:

How much I lost

Last week:         1 lbs and 1.5 inches

Total:                 5.2 lbs and 9.5 inches

What I ate

I made Market Hall’s Lentil Ragu with Poached Eggs, Chili & Mint and it was hearty and flavorful, especially with a drizzle of balsamic. If this counts as eating healthy, I will be able to keep this up even after I stop documenting my progress. Later in the week, I ate the rest of the lentils with arugula and it was equally satisfying. Here’s the recipe.

I also made a Broccoli Soba Bowl but I can’t remember everything I ate last week  because…um…I didn’t track all of my meals. Oops.

How I worked out

The workout app stopped working this week and I probably would’ve used that as an excuse before, but I was proud of myself when I came up with a solution and still made progress. I remembered a few exercises and made up a couple more to work up a good sweat. The only problem was when I skipped stretching one day and paid the price. I was limping and had to skip a workout so I won’t make that mistake again.

What I learned

  • Don’t forget to stretch.
  • If I’m not exactly sure what to do, it helps to just do something.
  • Accountability keeps me focused, so thank you for following my journey!

Next week

At this point, I’m struggling with staying consistent, so my goal is to go back to tracking all of my meals. Wish me luck!
